Beef and Cabbage Curry

  • 2 lbs Ground Beef Grass-fed (optional)
  • 1 large Cabbage
  • 28 oz Diced Tomatoes
  • 4 oz Tomato Paste
  • 14 oz Full Fat Coconut Cream
  • 2-4 Tbsp Yellow Curry Powder or to taste
  • Salt and Pepper to taste
  • 1 Tbsp Onion Powder
  1. Brown ground beef in a deep skillet or dutch oven.  Drain fat unless using grass-fed ground beef, then I leave it in.

  2. Chop cabbage into 1 inch pieces and add to the pan with the browned ground beef.  

  3. Add diced tomatoes, tomato paste, coconut cream and seasonings.  Stir to mix everything well.  (Now you see why I said to use a deep skillet or dutch oven!)

  4. Simmer for 15-20 minutes, or until the cabbage is soft to your liking.  Enjoy!

Recipe Notes

This recipe makes a lot, it's enough to feed 2 adults, 3 kids and have 3 adult size portions for leftovers.  If you need less, use 1 pound of ground beef and a small cabbage.  Adjust spices accordingly.
